OLD FASHIONED CHOCOLATE OATMEAL CAKE & CHOCOLATE FUDGE ICING

My twist on an old recipe. We absolutely love this cake and hope you do too!

INGREDIENTS

Chocolate Oatmeal Cake

  • 1 c Quick Oats

  • 1 3/4 c Boiling Water

  • 1 c Brown Sugar

  • 1 c White Sugar

  • 1/2 c Melted Butter

  • 2 Eggs Beaten

  • 1 3/4 c All Purpose Flour

  • 1 Tsp Baking Soda

  • 1/2 Tsp Salt

  • 2 TBS Coco

  • 1 3/4 c Mini Semi-Sweet Chocolate Chips

  • 1/4 c Buttermilk

  • 1/4 c Hot Brewed Coffee

    INSTRUCTIONS

    Cover oats with boiling water and allow to set for 10 minutes. Stir and cover again for 10 more minutes. Cream butter, sugars, and eggs. Add buttermilk and coffee a little at a time. Add dry ingredients. Add soaked oats. Beat well. Fold in 1 c of mini chocolate chips (save 3/4 c to sprinkle on top of batter). Pour into a greased 9x13 pan. Sprinkle remaining chocolate chips all over batter. Bake at 350F for 45-55 minutes.

    Chocolate Fudge Icing

  • 3/4 c Mini Marshmallows

  • 3/4 c Milk Chocolate Chips

  • 1 1/2 c Sugar

  • 1 Tsp Vanilla

  • 1/3 c Butter

  • 1/3 c Milk

    INSTRUCTIONS

    In a sauce pan add butter, milk, and sugar. Bring to a boil for about 1 minute, until the sugar is melted. Add in chocolate chips, mini marshmallows, and vanilla. Pour icing over hot cake.
